Deep red colour with garnet hue that will intensify with age. This is a wine more tannic than the Gamay, hence its long maturation in our cellars prior release. Well structured, it will leave a long finish in the mouth, marked by red fruits characters.
South / southeast facing slopes, on deep chalky soils with clay top soil.
Destemmed then hand sorted on a sorting table before crushing and put into a vat. Hand plunging and delestage, followed by a long maceration (between 5 and 6 weeks) with natural yeasts. Maturation in concrete buried tanks with micro-oxidation.
Red meats and cheeses whilst young. Drink with sauce dishes, game birds and richer food when mature.
Can age for 5 to 10 years, sometimes even more in great vintages
